We live in the country, but I'm a city boy at heart. Everything I know about agriculture, I learned at the supermarket. So when the Muse told me she was picking up some eggs from Mark and Lana's chickens, I didn't know what to expect.

When I opened the carton, the eggs looked a little smaller than the usual supermarket variety. And the colors. Most of the eggs we get from the supermarket are industrial beige/brown, with little variation. But these new eggs were blue and green as well. Our friends explained that they have different varieties of chickens, and each produces a different egg color.

So, to celebrate our 47th anniversary, the Muse and I will have three-egg omelettes made with green eggs and ham. (We don't have any ham, so we substitute bacon, a close relative.) Other ingredients are onions and cheddar cheese.

The home-grown eggs have a much tougher shell than the fragile supermarket eggs. Mixed for the omelette, the eggs have a much deeper yellow, hinting that Mark and Lana's chickens had been eating real stuff.

Who ever thought that, at my advanced age, I would visit the inside of that famous Dr. Seuss book. And, like Sam-I-am, I really liked green eggs and ham.
